Favorite Ranch Recipes

Piggy backing off of Lora’s last post, “The Ranch Table” I thought it would be fun to do a post with some recipe favorites! I asked others what their favorites are to cook for their men and/or on a work day and here is what we came up with. I am excited to try some of these for myself. Happy cooking/baking! :)


*R & B Martinmaas - Orient, SD (Darci Martinmaas)*

Tater Tot Casserole

Ingredients Needed:

-2lbs ground beef

-1 can cheddar cheese soup

-1 can cream of potato soup

-1 cup sour cream

-1 bag cheddar cheese

-3 cans green beans

-1 bag tater tots

Directions:

-season and brown ground beef

-in a bowl mix soup mixes and sour cream

-add ground beef, green beans, and cheddar cheese

-mix and pour into large baking pan

-layer tater tots on top and bake for 45 minutes

Cheesy Hash Brown Casserole

*Vermillion Ranch - Billings, MT (Kayleen Schultz)*

Poor Man’s Hamburger Steaks

Ingredients Needed:

-2 pounds ground beef

-1 ½ cups saltine crackers, crushed

-1 cup whole milk

-½ teaspoon Italian seasoning

-½ teaspoon garlic powder

-½ teaspoon onion powder

-½ teaspoon paprika

-¼ teaspoon cayenne

-salt and pepper

-1 cup flour for dredging (or more if needed)

-2 tablespoon butter

-1 tablespoon olive oil

For Gravy:

-2 cans condensed cream of mushroom soup

-1 ½ cups whole milk

-1 ½ tablespoons fresh parsley, chopped

Directions:

-combine the ground beef, crushed saltines, milk, Italian seasoning, garlic, onion powder, paprika, and cayenne pepper, salt and pepper

-form into patties

-place 1 cup flour in shallow dish (season with salt and pepper)

-dredge all the patties in flour

-heat a large skillet over medium-high heat and melt the butter and add olive oil

-once hot, sear patties on both sides until golden brown, work in batches, it will continue cooking in the oven

-transfer the browned patties to a greased 9x13 baking dish

-whisk together the cream of mushroom soup and milk, stir in chopped parsley

-pour the gravy evenly over the top of the patties

-cover the dish with aluminum foil to help prevent a mess

-place baking dish in the oven and bake at 350 degrees for 30-40 minutes or until cooked through

*Schultz Land & Cattle - Quenemo, KS (SueAnn Schultz)*

Nannie’s Yumzetti


Butterscotch Bars

Ingredients:

-2 1/2 cups all-purpose flour

-1 tsp baking powder

-1/2 tsp salt

-1 cup (2 sticks butter) or margarine, softened

-1 3/4 cups packaged brown sugar

-1 tbsp vanilla extract

-2 large eggs

-1 2/3 cups (11-oz. pkg.) Nestle Toll House Butterscotch Flavored Morsels, divided

-1 cup chopped nuts

Directions:

-preheat oven to 350 degrees

-combine flour, baking powder, and salt

-beat butter, sugar and vanilla extract until creamy

-beat in eggs

-gradually beat in flour mixture

-stir in 1 cup morsels and nuts

-spread into ungreased 13x9-inch baking pan

-sprinkle with remaining 2/3 cups morsels
